However, you can create dried fruits and veggies in the oven. To dry fruits and veggies in the oven, preheat it to 120-140°F.
Lay thinly sliced pieces on a baking tray and bake at a low temperature for 6-12 hours, flipping them every 30 minutes. After drying, let them cool for 24 hours, then pack tightly into airtight containers for storage or freezing.
Properly stored in a cool, dry, dark place, dried fruits can last 6-12 months. Aim for a consistent temperature of 59°F for optimal extended storage life.
Salt-Cured Meat
In an era without refrigeration, preserving meat was a crucial skill. Salt-curing involved rubbing salt onto fresh meat, typically beef or pork, to initiate the curing process.
The salt draws out the moisture, which creates an environment unfavorable for bacterial growth and spoilage.

Salt-cured meat provided pioneers with a reliable source of protein that could sustain them during long journeys or when access to fresh meat was limited.
How To Make Salt-Cured Meat
You will need ½ – ¾ tsp of salt per pound to spread evenly over the meat. Ensure you cover all areas evenly and entirely with salt.
Take your salt-covered meat, pop it in the fridge (a luxury our pioneer ancestors lacked), and leave it alone for at least to 24 hours. Larger pieces of meat can safely be salt-cured for 48 hours or longer without issue.
Once the meat is cured to your liking, rinse off any excess salt and pat it dry. You can then wrap it tightly in cheesecloth or butcher’s paper and store it in a cool, dry place like a pantry or cellar. Hanging the meat is another option for storage.
Pemmican
This nutrient-dense, high-energy food was widely consumed by pioneers, hunters, and indigenous peoples.
It was made by drying lean meat, typically buffalo or beef, and pulverizing it into a powder. The powdered meat was then mixed with melted fat and sometimes combined with dried fruits.
Pemmican could be stored for months or even years without spoiling, making it an ideal source of sustenance during long journeys or harsh winters.
How To Make Pemmican
Slice 1½ lbs. shoulder roast into thin slices, adding a generous amount of salt and pepper. Set the oven to 150°F.
Lay the thin slices of meat flat on the cooking rack and keep the oven door slightly ajar to prevent moisture. Dry the meat for at least 15 hours or until it has a jerky-like texture.
Once dry, remove the meat and allow it to cool completely. Grind the dried meat in a food processor until it becomes a fine powder. Repeat the process with any fruit you wish to add.
Next, you will need fat. Many people like to use bison kidneys, which can be purchased already diced into small pieces.

Place approximately ½ lbs. of kidneys (or whatever meat you are using) into a cast iron pan and cook slowly on low heat, draining the fat when enough and bubbling ceases.

Remove the liquid from the heat and pour it over the packed veggies, sealing the jar tight.

My favorite mix includes coriander seed, mustard seed, black peppercorns, garlic, onion, and fresh dill. Pioneer Jerky
Beef was a big part of the pioneer diet, and if you have ever purchased a whole or half cow, you know how much meat it can provide.
At a time in history when throwing meat in the freezer was not an option, jerky was one of the easiest, most effective ways to store beef for extended periods.
How To Make Jerky
Slice the meat into thin strips, approximately ¼ to ⅛ inch thick. In a bowl, combine salt, pepper, and any additional spices or seasonings you prefer.
Rub the mixture onto both sides of the meat strips, ensuring they are evenly coated. Allow the seasoned meat to marinate in the refrigerator for at least 6 hours or overnight.
Preheat a smoker or charcoal grill for indirect heat cooking. Place the marinated meat strips on the grates, making sure they are not touching each other.
Smoke the meat at a low temperature, around 150°F to 175°F, for several hours until it reaches the desired level of dryness and smokiness.
Once fully smoked and dried, remove the jerky from the smoker or grill and let it cool completely. Store the smoked jerky in airtight containers or wrap it tightly for long-lasting preservation.
Molasses Cookies

I have bought a couple of the LOST WAYS book. Still using recipes from my Mom and Grandma’s handwritten recipes. Yes guys should know how to cook. Not all females know how to cook. So it is good both sexes start learning how.
Those delivery services don’t work if the electrical grid goes down, no WIFI or smartphones to order the food.
People need to learn at least the basics of taking care of themselves. A lot of people now days can barely make a mac and cheese dinner (from a box).Start with basic skills and then move up to more complex stuff.
A friend asked me to teach his wife to can meat. I agreed… and when she showed up, she got a load of the pressure canner, all of the jars/lids and the general process and she literally ran screaming out the door. I didn’t realize that this person HAD ZERO BASIC SKILLS. If I had, I likely would have declined to start her off with a talk on pressure, temperature, why elevation matters, etc.
If you don’t already… learn the basics of putting down healthy, made from scratch meals.
That is what happens when the teacher’s union took out home economics and shop classes.
One reason is schools have gotten rid of HOME Economics which taught basic things like cooking, washing clothes, cleaning etc. Mostly the fault of the feminist movement IMO because they touted it as making women “subservient ” to men. I took Home Ec in HS along with my mom teaching me how to cook, clean etc and while I may have complained at the time I am so glad I learned those things. Kids today learn nothing like that in school–neither boys or girls. Same with shop class. We even had several girls take shop class in HS in the 60’s. There is NO EXCUSE for parents not teaching basic things like cooking, cleaning, washing clothes, balancing a checkbook or credit card and keeping track of everyday finances etc. I learned to cook a grilled cheese when I was about 7. If I can do it (I’m a real clutz) ANYONE CAN!! They just don’t want to because they think everything should be handed to them. I’ve never understood why people would spend $5 or $6 on Mac and cheese at KFC or some other place when a box of it costs less than $2 at the store. Yes I eat out sometimes but not every meal every day like some do. And washing/drying clothes IS NOT THAT DIFFICULT it only takes a bit of time and you can do it while doing other things. WE need to get back to teaching our kids/grandkids the basics in how to “keep house” as well as teach them the truth about things our schools are teaching (brainwashing) them.
Yeah remember those days of creeping Marxism in the 1970’s. Some good stuff, some dumb whinny bitches burning bra stuff.
The KFC and McDonald’s were a treat and a hangout for the HS kids back then.

NEGATIVE on oven temperature for dehydrating berries.
On Active Duty, there are two words for “NO”!. The Word “no” means, refusal to do something. The Word “Negative” means disagreement, or having another opinion.
At 122-degrees F Vitamin C found in berries, many fruits and vegetables will begin dying–in effect. It will begin degrading and becoming useless for its best use purpose!
Vitamin C is probably the most important Vitamin against all 5 health-disabling factors in Nature (and because it is the smallest Vitamin that can go everywhere in the body): viruses, bacteria, parasites, fungi (allergens), and poisonous toxins (Any Spider bite, insect stings, plant poisons, nuclear radiation, and heavy-metals [arsenic, mercury, aluminum, lead, etc.], etc. RESEARCH TESTS PROVE IT. However, it is the dosage of Vitamin C that is the critical issue, as well as how long one takes that optimal dosage; and as well as how it is distributed (getting into the body). By the way, Vitamin C does not have to be swallowed, it can be formed into a paste (or just painted on skin) and absorbed through the skin (especially skin close to blood vessels, such as bottom of feet, arm-pits, groin area, forehead, where the jaw attaches to the skull beneath the ears; and on any open wound). This is really important to know for babies and anyone unconscious–because newborns do not know how to swallow, but do learn quickly how to suck. Most parents have seen this, the baby sucks and the milk drips out of their mouth until they learn to swallow. It is also good to know for anyone unconscious, who would likely choke or aspirate (inhale a fluid) on anything put into their mouth.
