The American Civil War was fought between the north and the south, divided only by the Mason-Dixon line on a map. This war was a major turn in American history where brothers fought against brothers.
Wartimes are not historically known for feeding soldiers well on either side.
The Civil War had two sides; the Confederate South and the Union North. Confederate states seceded from America to form their own free country where slave work was legal. The Union fought to keep the country united and the war ended in their favor in 1865, four years after the start of the war.
Food rations were scarce and not favored by Union or Confederate soldiers.

Union soldiers were supplied with more food, yet the food they received was often unpalatable. Confederate leaders had much less to give their soldiers, so they ate similar food in fewer quantities with more room for error.
Union leaders often provided everything they could, but, nonperishables were hard to carry and eat on the move.
Many military-provided foods were regarded as disgusting. Soldiers on both sides would carry meat bags for their salt pork or beef. The bags would smell of rotted meat within days.
Still, the Union soldiers were much better off than Confederate soldiers. The Union had a fully established government providing for them and the Confederacy did not, so provisions were worse.

Beef Jerky
Chances are, you have had beef jerky at some point in time. Store-bought varieties are found all over the supermarket in many different flavors.

Beef jerky is a dried product that allowed it to last a long time in a soldier’s satchel.
By removing the moisture from the meat, bacteria cannot multiply as quickly, thus ensuring a long last ability.
There are tons of simple recipes out there for drying beef without the use of special equipment, giving you the best idea of what 1860s soldiers ate on the move.
Beef or Chicken Tea
Yes, meat tea is a thing. It was an important drink that provided Civil War soldiers with nutrients and protein without much effort.
Beef tea is a flavorful, concentrated beef stock made with organs, bones, meat, and connective tissue leftover from farming cattle.
Solders either made this recipe their own or drink provided beef tea.

Soldiers were always on the move, so cooking something in one place for long periods was not always an option. However, once they received their meat tea, it could be drunk while walking from one battle to another.
Meat tea provided tons of protein and energy to the men and is still healthfully enjoyed today in the form of bone broth.
Captured Cattle
Disclaimer: I am not advocating for the theft of other farmer’s animals in today’s world!
However, during Civil War times, it was common for soldiers, especially Confederates, to steal cattle from local farms.
Confederate soldiers were not provided with food on as regular of a basis as Union soldiers, so they had to get thrifty to survive.
Pigs, goats, sheep, and chickens were all “borrowed” during this time to feed famished fighters of the war.
Soldiers could also rely on the kindness of farmers to give animals, if they were on the same side of the war, that is.
Cornbread
Cornmeal mixed with water and baked over an open fire was about as homemade as food got during the Civil War.
Cornbread would be consumed long after its freshness and moisture evaporated just so the soldiers did not work on an empty stomach.
Some Confederate soldiers even cooked their cornbread on their muskets.
They turned cornmeal into a dough then wrapped it around the ramrod for grilling. The results were charred but completely edible.
Dried Fruits and Vegetables
Dried fruits and vegetables are easy to carry without spoilage on the battlefield.
Dried fruit was harder to come by, yet, dried vegetables were much less favored. Vegetables without moisture were unpalatable to soldiers of both sides and needed to be cooked or soaked before eating.

Dried veggies today work well in soups and stews, as they are commonly found in prepared dried soup mixes.
Foraged Produce
Soldiers, especially in the south, often ran out of food before more was provided.
They often relied on the kindness of strangers, who would set up food stands right outside battlefields. If food was not provided, soldiers needed to forage to survive.
Southern soldiers would forage anything they could find; dandelions, berries, wild onions, and small animals were among the few. Union soldiers luckily did not come across food shortages often.

Hardtack
You may have heard of this stuff before, as it has gotten humanity through many times of starvation.
Hardtack is a mixture of wheat flour and water, cooked or baked over a flame, then dried for easy carrying.

It was so hard that it was known for chipping teeth when eating.
To make hardtack more edible, soldiers would soak it in coffee or water to soften.
Due to its lack of moisture, this stuff could be stored for weeks and kept for an emergency food source.
Oranges
To fight off scurvy and the terrible symptoms that come with it, consuming oranges was a big deal for Civil War soldiers. The fruit was provided more in the north, leading to healthier living standards for Union soldiers.
Worrying about scurvy is a thing of the past, but oranges are still a healthy, tasty fruit to keep around.
Orange trees make tons of oranges every year, so consider growing one if you live in the right climate.
Salt Pork
Back in the 1860s, salt pork was widely regarded as “bacon”.
The bacon we know today is a smoked, cured meat that we crisp up during cooking.
Back then, it was a general term for dried, salted hog meat.
Salt pork was easily transported and often contained undesirable cuts of meat such as connective tissue and organ meat. You can still find salt pork today sans organ meat.
Wild Game
Soldiers already had guns and weapons, so they used them for hunting in desperate times.
Confederate soldiers hunted any wild game they could find such as turkeys, wild hogs, and geese. Hunting and foraging were much more common in the south among soldiers.
Many folks still hunt wild game to this day and much prefer the flavor to store-bought meats.
One more thing
Even if it’s not a food, everyone’s favorite wake-up juice was bought, bartered, and traded in Civil War times.
Coffee was inexpensive, tasty, and kept soldiers awake during long travels. It also stayed fresh for a while and was easy to carry around.
Union soldiers often had commissaries where they would buy coffee, whereas Confederate soldiers did not.
During battle downtimes, Union soldiers would trade coffee with Confederates for tobacco, a Confederate crop that was in short supply up north.
The Civil War was a dark time in American history, dividing the nation into two angry sides. The Union soldiers were well-provided for although some foods were not very pleasing. Confederate soldiers were significantly less well off.
The need to forage, steal, hunt, and trade were much more prevalent in the south to avoid starvation as the war raged on.

Meat tea? Is that the same thing as broth?
A warning about hard tack. Soaked in coffee, it is addictive. It’s like that chip commercial. “You can’t eat just one.”
Old cookbooks of the era often had a section in the back for invalid foods. One was meat tea, which some recipes have the cooks pressing the juices out of a roast.
Interestingly, I found many cookbooks published after the Civil War written by the black cooks who no longer had a plantation kitchen to work in. I was surprised to read that many of their recipes used in the plantation kitchens were quite economical and similar to “comfort foods”.
Surprised to see oranges o the list! Oranges were a expensive delicacy back in the day, especially if one lived in northern climates; usually reserved for special occasions and Christmas stockings.

I believe the next “civil” war won’t be as civil as the first one. The reason for the first war was to keep the country together or split into two nations; the reasons for the second war will be to enslave or kill the “wrong thinking” people. There is no Mason-Dixon line for the upcoming war, so the country cannot be divided into separate nations.
Supply lines will be impossible to maintain. Foraging, trading, and theft, will be much less convenient because enemies will be living in close proximity to each other. The military, UN peacekeepers, and police will have identifying uniforms, for awhile, but the capital police, FBI, and other government agencies will be harder to identify. Then you have your neighbors; are they on your side, or are they collaborators?
I don’t want this war, but it will happen. I can only hope and pray that when the war comes to me, I am prepared physically, mentally, and spiritually enough to face the challenge without breaking.
This war, is what we as preppers have been prepping for. Looks like we just might get to try out our preps after all…

We have never had a “civil war”. Look up the definition. The South simply seceded and wished to be left alone.
I agree. For many years I swallowed the line furnished by the winners, the North. In more recent years I have done independent, adult reading, not the childish fairy tales you got in organized schools.
It is now my opinion that Lincoln forced the war and it had very little to do with slavery. Lincoln didn’t give a tinker’s dam about the slaves. The war was about tariffs and federal income. Lincoln wanted to solve the negro problem by rounding them up and either shipping them back to Africa or, his cheaper, more favored plan was to ship them to some unlucky Central American country, thus initiating the long, historical practice of the U.S. of dumping on our hapless neighbors to the south.
Lincoln forced the South into the war. He had agreed with Davis that he would abandon Fort Sumpter. Instead he reinforced it making it appear to the frustrated South that he intended to hold a hostile fort deep in their territory.
You may disagree. Almost 200 years later the country is still divided about the War of Northern Aggression. The North invaded the South long before the South turned northward.
We still want to keep the woke noses out of our lives! Black Democrats and busy body Democrat women have always destroyed the cities and communities they control! The South seceded before Lincoln took office, convinced the ‘Black Republicans” were controlled by Abolitionists and would outlaw slavery. We’ll never know what they might have negotiated with Lincoln who was the ultimate pragmatist. In Texas the war was all about slavery, nothing else. The slave owning Governor Houston voted against secession, then advocated for an invasion of Northern Mexico after Texas was free from U.S. law. Other forces in Texas advocated for an immediate conquest of New Mexico and California and the creation of a slave empire reaching to the West Coast. We sent out an expeditionary force with that end in mind but it was poorly led and ingloriously defeated near El Paso by a militia made up of Colorado miners. Florida politicians dreamed of a slave empire encompassing Cuba and the Caribbean, reaching all the way to Nicaragua. Virginia had ambitions to become an industrial power, the Virginia Secession Convention never mentioned the possibility of war, or preparing for it, didn’t address slavery but was mostly concerned about the foundations of new industry and its ability to compete with the north. I haven’t checked to see the exact date when Sumpter was fired on but it is my recollection it was after Lincoln was prez. Lincoln was a republican, the party that was most vocal about abolition. The conflict was as much about tariffs and duties collected on imports as it was about slavery. The South was in favor of low tariffs. The industrialized north was trying to maintain high tariffs to protect their industries from imports.

If there weren’t so many adverse side effects and if it actually worked, I would be the first one to agree with you. Barry Obama a triple vaxxer has come down with CoVD. My brother and his wife, triple vaxxers also came down with the dreaded CoVD after their triple vax. The took my advice and embarked on a Vitamin C, Vitamin D and zinc regime and were over it quickly. If other vaccines, smallpox, diphtheria, polio, had similar results they would have been pulled from the market place, I believe. The public at that time was a lot more individualized.

Ivermectin and others also work on virtually all viruses (colds, flues) and variants to date. And it’s dirt cheap with one of the highest safety records. It was originally handed out as an anti-parasite drug for humans and animals. So no need to worry about parasites now. In my opinion, the news and political elites that lined themselves up with the criminal pharmaceuticals, caused millions of unnecessary deaths. These vaccines were intentionally pushed with the knowledge of the damage they caused. I also found 47(?) reported studies, from over the years, that found that masks are basically useless in stopping viruses.
Our status – as far as we know, we have never had the Chinese virus. One possibility was in January 2020 when the virus first arrived here. We both came down with similar symptoms, that were similar to other friends at that time. But, we all thought it must have just been the flu. Who knows?

The civil war was not a civil war at all.
It was a war that started because of high taxation of the south by the north > Federal Government in excess of 40% in excise taxes on everything, this provided the government with over 70% of it`s tax revenue. It only involved the northern and southern states, not the entire nation, so it was not by definition a true civil war. The western territories were not involved. It was also not about abolition of slavery, Lincoln stated this himself & had no intention of abolishing it. The entire affair is more complicated than most think, as we are only given the edited version or official narrative that the government wants us to have and believe. Some other facts are: 50% of all slaves were white Irish who worked right beside African slaves. 50% of all slave owners were black ex slaves. The worst was an ex black slave who was a breeder of slaves and funded the south. 4 out of 5 slaves were owned by Jews, or 80%. 70% of all slave ships & auction houses were owned by Jews. All slave ships docked in the northern ports. The Atlantic slave trade was started by 3 Jews who went to the king of England to authorize it & had the cooperation of the African kings who profited from it as well. 50% of the early settlers were enslaved by the UK when they came over and claimed the USA for their own. The original early settlers got along with the Native Americans quite well, this is how thanksgiving came about, it was a yearly celebration of their friendship we now call it “Pot Luck” everybody brings a homemade dish to the party. The is much more to it than I can go into here, but our constitution was changed ** Illegally** after the war because it bankrupted the government, so Lincoln had to borrow from UK bankers that’s when we went from a republic to a corporation. Look at your birth certificate, it is in all capitals, this is how corporate incorporation papers are printed. In reality because our original constitution was not formally changed in the prevailing way by a constitutional convention then passing any amendments by a 90% majority then go to the states and 90% of them would have to approve it then back to the federal government for final ratification, this was not done, and the entire procedure was changed to 3/4 of both. The original document was changed from”For” to “OF” the USA with it being in all caps, the way corporate docs are done, so anything under it is invaded, but we are forced to use and abide by it anyway. So much for the USA being a free country, we were subverted from within, long ago by our own government. All of this is verifiable documented facts, you just have to look for them.

Although history does not document the correct number of white vs black slaves, it is well known by the Irish that for centuries, Irish towns and many individual people disappeared into slavery without so much as a comment by the British Masters.
The largest mass grave of black slaves, over 300 bodies, was found in New York. Evidently, when they didn’t want these folks, they just killed them off.
More free blacks fought for their homes in the South along side their white neighbors as were conscripted and formed into separate / black units by the North.

That stopped when importing slaves was outlawed. In defense of my Southern kin, at least the South had a reason to import slaves. Yankees did not other than greed. Not just Irish, but after the battle of Culloden, Brits stripped Scotland of every man who fought against them. Because they were political slaves, they could not be freed after so many years. But, most people who bought them freed them anyway. A lot of European nations sold their convicts to the colonies. The major difference in north and south bondslavery was Northerners obeyed the Bible and treated their slaves as brother sin the Lord. When my ancestors were freed, they were paid as if they had been free. Pay was land, axes, livestock, and so on. Southerners usually didn’t.
The largest mass grave of blacks, Brooklyn, NYC, is also the largest mass grave of American Indians and Jews. Liberals have long tried to claim this was the site of a mass murder, but have no proof. Considering that this cemetery has been in existence since New York was founded by the Dutch, I’m surprised that there were only 300 remains. It’s closer to 3,000, but then, I checked it for myself with historians not affiliated with the dnc. Given the place was a cemetery long before Columbus showed up, the number may be much higher.
Yes, a lot of black slave owners fought for the South, but the dems wouldn’t allow them any real power or the war’s outcome might have been different. American Indian officers and troops were made to fight on the frontier, and only against American Indians and blacks. But, dems are great at gunfights, at least when they shoot themselves in the foot. That, their aim is always perfect.

I have worked in the private sector. I have been subject to organizations. In most work or organizations, the head people make up their own laws and in effect break the laws of the country. They basically claim people as their property and blackmail them into submission.

Well, yes and no. It was conservative North against the democrat South. Religious North against agnostic South.
In the 19th century, citrus was so expensive people in the lower middle class saw it once a year, at Christmas. All of us had something superior to citrus, vinegar. Most apples were crushed and cider put in barrels where it turned to vinegar. Apples were so important, southern agronomists developed a lot of varieties that would produce in warmer zones. But, southern Appalachia was a major producer and still is.
Properly dried cured meat was coated in fat and kept for months. Salt meat drew moisture and soon decayed. American Indians did their winter hunt and treated it like that. Meat remained good till the next summer. That’s how pemmican works so well. It’s chopped dried meat packed into bungs with dried fruit and has boiling tallow poured over it. Sausages were common, and usually dried, then soaked in watrer and cooked. Hams, as well.
Livestock were not stolen, but ‘liberated’. (cough! 🙂 Not just cattle and hogs, but dogs, mules and horses, turkeys and anything that could be driven (the original American cattle drive included turkeys and sheep, and went about 24 miles to Boston Commons).
A pound of coffee cost a day’s wages! Put it in modern terms, $160.00/pound. Anyone who made a pot of coffee reboiled grounds till nothing was left but memory. Until John Arbuckle began to sell roasted beans (1865), they were sold raw, and subject to insect infestation, mold and so on. niio
Don’t know where you got the idea that the North and South were divided by religion. Where did you get that information? The South is very traditionally very religious. For instance the Southern states, were founded by religious European countries except Georgia, which was a penal colony. Louisiana and all the territory controlled by France divided the country into “parish” areas. A standard of slavery was set, and no slave could be punished more than required for any infraction and never killed.
Reconstruction by an overbearing and vindictive Federal government did change and infuriate Southern people and that resentment still exists.

From my own research on the antebellum South–for the last four decades. From family members who had ancestors, like some of mine who died in the war. We had family on all 3 sides of that war, on the North, the South, and against both sides. From historians in the family. Places like Ft. Sumter were just as much part of the US as Gitmo is, today. The South is today in a relationship with the Lord, NOT religious. If you actually studied this, you’d see the main group of Christian believers were slaves and freedmen. Jackson, who reformed the democrats, lived with Lewis Robards’ wife, Rachel, as if they were married. Again, democrats owned the South. Democrats kidnapped people and sold them and it was ignored. This was people of all races, not just blacks. The antebellum South made war against firm allies, just as it does today. These people were Christians–what does the Bible say of that? Ask the 5 Civilized (Americanized) people about that.
The southern states were founded by get rich quick people. Each colony at it’s beginning had to forces laws on people to make them work, not just hunt for gold. A slave was property, and families could be ripped apart. Most bordellos in the nation had children working there.
Reconstruction was done by Johnson (from Tennessee), a Buchanan democrat who switched to Republican but was still a Democrat, AKA RINO. Buchanan was a pro-slavery Pennsylvanian who remained a strong influence in the party. Reconstruction was started by Lincoln, who wanted peace, not the lies some were fed by the very vindictive dnc. When the dems attacked Ft. Sumter, he cried. A dem killed him in part because they knew Johnson would do as the wealthy southerners wanted. Johnson sold out to the dnc and the South remained in poverty till they booted out the liberals. Don’t blame the North for the evils of liberals. Colonial Southerners ignored King James’ law that all children shall be educated. Northerners obeyed that and went so far as to give Bibles to children whose family couldn’t afford them. The main reason for this law was so children could study the Bible. Where God isn’t important, neither is the Bible.
red, you are misusing and mislabeling Agnostics again, please learn what the real definition of an Agnostic really is, and then please use it in proper context. If you meant the south was prominently Baptist, Evangelical, or any other Christion denomination, please say it correctly. Agnostics are not members of any of the established religions no matter when or where they are located.

You know, this article is about food. I am reading so many frustrated people with some wild ideas about race and religion (“Jews” yes that is invoking religion). I really do not care what happen back when both in the North and South were largely uneducated. What I care about is how we prepare for a disaster today. No ethnicity, religion, or some status otherwise, canNOT survive or thrive if we do not all come together as a community. If you feel threatened by someone who looks differently than you or believes differently than you, you are not being the solution. As a retired cop from a major city, I have seen drug dealers (which I have the lowest opinion of) even help during a crisis. There is a potential for greatness in everyone. Lets stay on track with the article’s subject, can we please?
